Characterization and functional analysis of the MAL and MPH loci for maltose utilization in some ale and lager yeast strains
Article Abstract:
Maltose transport kinetics with the genotypes of some ale and lager yeasts are correlated and the MAL and MPH loci for maltose utilization in some ale and lager yeast strains are characterized. The results show that in some brewer's yeast strains some of the apparently multiple maltose transporter genes do not code functional transporters, which accounts for some marked differences between strains in alpha-glucoside transport and wort fermentation.
