Modeling of the competitive growth of Listeria monocytogenes and Lactococcus lactis in vegetable broth
Article Abstract:
A mathematical model consisting of a system of nonlinear differential equations that describe the growth of competing bacterial cell cultures is developed. Objective of the study is the development of a theoretical foundation for the use of biocontrol cultures in foods by identifying the factors that are essential in the predominance of biocontrol bacteria over pathogenic microorganisms. The accumulation of protonated lactic acid and decreasing pH is observed to be regulated by bacterial cell growth while parametric values affecting population growth and death are predicted.

Significance of inoculum size in the lag time of Listeria monocytogenes
Article Abstract:
Small inoculum size can delay the lag time of Listeria monocytogenes when the bacterium is stressed by starvation and suboptimal conditions. Stochastic models should be used by the food industry to predict the growth of small amounts of bacteria typically present in most foods.
