FRANCE: REVIEW OF THE COOKED HAM MARKET

Sales of superior ham at delicatessen counters represented FFr 4.69bn for the twelve months ending March 1999, calculated monthly, down 4.9%. Several factors are combined in this poor performance: competition from the self-service departments, development of poultry ham, the rise in discount selections, and the rise in the price of raw materials. At delicatessen counters, consumers like cloth wrapped ham with no rind or fat; this has risen 12.2%. They also like gourmet specialities whose sales have boomed, up 69.3%. However, sales of other categories of products have declined, particularly standard ham without rind or fat, down 19.3%, cloth wrapped ham with rind, down 15.5%, ham with bone, down 9.2%, and standard ham with bone. Manufacturers are focusing on product innovation in order to stimulate the market, with old-fashion varieties, specialities and products with special labels. Some think that the selection at delicatessen counters should be clarified, since this section lacks a frame of reference and identification.

FRANCE: REVIEW OF THE DRY SAUSAGE MARKET
Article Abstract:
The French dried sausage market rose 0.8% in volume and 2.8% in value in the self-service departments of supermarkets and hypermarkets, during the 12 months ending 31 August 2000. Two segments cam through just fine: traditional products made by small and medium-sized companies, and snack products which posted a 5.5% rise in sales during this period. Promotional activity on the dried sausage segment declined, representing 25% at 31 August 2000, down 9%, from l999. During this period the average price per kilo jumped from FFr 73 in spring 199 to FFr 80.30 at present.

The two major sales trends on the salt meats products market a regional products and practicality. Chorizo and dry sausages have been miniaturised for the snack market. In the dry ham segment, products from different regions are vying with each other - products from Bayonne, Savoy, Auvergne, and Spanish and Italian hams. The dried sausage segment is evaluated at 38,000 tonnes for a value of FFr 2.9mn at the end of August 2000. This segment is estimated at 9,800 tonnes in the self-service departments, and the dry ham segment has posted a 4.3% rise.
