The EU produces 2.8mn tons of canned vegetables per year. 44% of this total is produced by France, 20% by the UK, and 10% by Holland. In this sector, the most common products are peas, green beans, sweet corn and vegetable mixtures. This production is enough to largely cover the consumer needs of the EU. A large proportion of foreign trade takes place between countries within the EU, exchanges with countries outside the EU represent just 21% of imports, and 27% of exports. The primary supplier of the EU is China, whereas the primary clients of the EU are the USA, Russia, the Canaries, Saudi Arabia and Switzerland. The principle consumers are France, the UK and Germany. European frozen vegetable production is 2mn tons per year, and originates mainly in 7 countries. These 7 countries are, in descending order (from the largest to the smallest producer): Belgium, France, the UK, Spain, Italy, Germany, and Holland. Belgium is also the biggest exporter of frozen vegetables in the EU, ahead of France. The most common imported vegetables are sweet corn, peas, green beans, and peppers. The consumption of frozen products continues to rise in the EU to a level of 5.4mn tons, including 1.9mn tons of vegetables. France and the UK are both major producers and consumers of frozen vegetables, whereas Belgium, Italy and Spain produce frozen vegetables, yet do not consume a great deal.

According to the Potato Industry Association, the French processed potato industry processed around 1.4mn tonnes of potatoes in 1997, compared with 1.2mn in 1996. French industry produced 302,000 tonnes of processed potato products in 1997-1998. The installation of a contingent of starch potatoes in Europe in 1994 meant that the tonnage of processed products dropped from 345,000 to 250,000 tonnes. The rise in the production of potato-based products is due to three categories of products: chips, for which production rose from 36.400 in 1995 to 1996, to 44,800 tonnes, frozen chips which rose from 268,000 tonnes in 1996-1996 to 285,000 tonnes, and chilled potato products, which rose form 41,600 tonnes in 1995-1996 to 53,600 tonnes. The production of dehydrated products held steady at 61,000 tonnes. Sales of frozen chips, and particularly potatoes packaged sous vide and fresh chips have grown steadily from less than 20 kilograms per capita in 1987 to 27.5 kilograms in 1997. French exports of processed potato products came to FFr 750mn in 1997, while imports came to FFr 1.2bn, compared with FFr 1.7bn in 1996, resulting in a trade deficit of FFr 530mn, a compared with FFr 1bn in 1996.

On 30 September 1998, the 275 members of Vico, the French cooperative group which makes a turnover of FFr 800mn, will vote on the plan to close two of the group's potato processing plants which makes chips and dehydrated mashed potatoes. These two plants, located at Vic-sur-Aisne and at Braine, have a workforce of 730 people. A German company is said to be a candidate to purchase these to units.
