A review of the UK bread market for the period 1992-1996 reveals that the market is saturated and static. More than 99% of households consume bread products, and the industry suffers from the perception of bread as a staple food. Supermarkets exacerbated this perception when they used bread as a loss leader in the early 1990s. The review revealed that consumers are beginning to demand better quality, tastier forms of bread, which can be enjoyed in their own right rather than as a base for other products. However, bread faces increasing competition from other carbohydrate foods.

The UK market for bread is forecasted to be worth 1,877 million pounds sterling in 1998, a 10.6% increase since 1994. Some 10.8 million pounds sterling was spent on advertising bread products, in the UK, during 1997. A predicted 2,099,000 tonnes of bread was produced by UK bakers, in 1998, with only 147,000 tonnes being produced by craft bakers based in high street locations. The most popular speciality bread product was French bread which accounted for a predicted 48% of sales in 1998. Almost 75% of bread sold throughout the UK is made at plant production bakeries.

Bread and morning goods

The UK bread market is a saturated and mature one, but the market for morning goods such as scones, crumpets, rolls and teacakes is growing strongly. The most rapidly growing sector within the morning goods and bread market is the market for speciality and Continental bread products, which has grown by 117% from some 30 million pounds sterling in 1989 to 65 million pounds in 1995. Strong retail competition during 1991-95 has led to a sharp drop in the price of bread. Other trends include the growth in own-label bread and the growing dominance of plant bakeries.
