In 1995, the retail market for cheese totalled 1.3 billion pounds sterling, representing a 5% rise over 1994. Volume sales rose to 298,000 tonnes, from 286,000. Cheddar made up 49% of the total market value in 1995, although Continental and territorial cheese are gaining market share at the expense of cheddar. The UK retail market for cheese has seen little growth over recent years. Indeed, volume sales in 1998 were down by just under 5% from 1997. However, the market seems set to stabilize in 1999. There is growing demand for cheese from the food services sector as cheese is increasingly used in prepared dishes, especially pizza. The UK retail cheese market reached a value of just over 1.4 billion pounds sterling in 1997, but has subsequently declined slightly.
