The market is dominated by the wet sector, with a 79% share of sales in 1994, worth 222 million pounds sterling. The dry sector was worth 58 million pounds sterling in 1994. The UK retail market for cooking sauces will grow 28% by value to 420 million pounds sterling by the year 2001 at current prices from 327 million pounds sterling in 1997. The market grew by 5% in real terms to 306 million pounds sterling in 1996 partly due to growing demand for convenience products. The sector for wet sauces in jars has good growth potential. Sales of wet Indian cooking sauces increased 8% during 1994-96, Italian 12% and oriental 17%. About 33% of people in the UK do not use cooking sauces.
