Information and advertising: the case of fat consumption in the United States
Article Abstract:
The relationship between diet and heart disease was already established in the 1960s. US government and general information sources built on this knowledge through education programs that highlighted fatty food consumption and its related health risks from 1977-1985. However, food manufacturers were allowed to make 'health claims' from 1985-1990. Information has not exhibited extensive impact on total food consumption behavior. However, advertising showed promise in promoting such information and affecting market behavior.
