The UK retail market for organic and ethical foods is predicted to be worth 553 million pounds sterling by 2001, an increase of 88% from predicted sales in 1997. Organic foods are sold mostly through supermarkets which accounted for a 60% share of all sales during 1996. Vegetables are the most popular type of organic food sold in the UK, with sales worth 88 million pounds sterling in 1996. Sales of organic foods are forecasted to be worth around 260 million pounds sterling in 1997, an increase of 145% since 1992. Organic foods were only 1% of all food sales in the UK.
