Slow food has become a big business in Italy thanks to several guidebooks like Osterie d' Italia and the emergence of its restaurants in the big leagues of international cuisine. Osteria di Rubbiara serves the best pasta preparations, La Rosa del Trinoro serves magnificent gnocchi, truffle-stuffed rabbit, and roast pork with cipolline, and La Darsena, a trattoria, serves antipasto including seven different kinds of braised cuttlefish.
