The most creative chefs in the US are adapting and improving popular ethnic cuisines in restaurants throughout the country. Gerard Panguad from Gerard's Place in Washington, DC, offers the Granita of Pinot Noir with Berries dish. Other cuisines offered in the US include dishes from Greece and Mexico.

Renowned chef David Paul Johnson was a high school dropout and gang member in Salt Lake City, UT, and was in juvenile hall when he was first inspired by Julia Child on public television. Today he has an award-winning restaurant. His recipes for seafood cakes and other dishes are given.
