Improved phytonutrient content through plant genetic improvement
Article Abstract:
The genetic enhancement of crop plants to produce higher levels of micronutrients will require interdisciplinary research among geneticists and nutritionists. This article offers the knowledge base for plant genetic enhancement, gaps in current scientific knowledge, and a role for the federal government in such research.

Influence of production, handling, and storage on phytonutrient content of foods
Article Abstract:
How agriculturally-produced food products are handled and stored affects their phytonutrient content. New research and food production paradigms must be established to reflect these new priorities in agricultural research.
