Interaction of iron with other nutrients
Article Abstract:
Many nutrients may increase or reduce the absorption of iron in the body. Iron is present in many foods and some foods are fortified with iron. Iron in the hemoglobin and myoglobin present in meats is easily absorbed regardless of the diet. However, non-heme iron is less easily absorbed and may be affected by other nutrients. Nutrients that can increase iron absorption are vitamin C and citric, lactic and malic acid. Nutrients that can reduce iron absorption are phytates in bran and polyphenols in tea.

Article Abstract:
Understanding the molecular basis of iron deficiency is still in its infancy. Iron absorption takes place in the intestinal region, where other factors may contribute or prevent to the process. Mucosal factors also help regulate iron absorption prior to transport, storage, and compensation. Complex metabolic functions strive to keep a good iron balance, thus avoiding excessive or inadequate amounts of iron. Supplemental iron requirements depend on dietary intake, age, gender, and disease status.
