Near infrared spectroscopy - a potentially useful method for rapid determination of fat and protein content in homogenized diets
Article Abstract:
A new study investigates the potential of near-infrared reflectance (NIR) spectroscopy as a fast and non-destructive method for determining fat and protein content in freeze-dried and homogenized human diets. It is shown that the NIR method is able to accurately determine fat content in homogenized, mixed diets, although its accuracy for protein is less acceptable.

Effects of partially hydrogenated fish oil, partially hydrogenated soybean oil and butter on the susceptibility of low density lipoprotein to oxidative modification in men
Article Abstract:
The consumption of trans-fatty acids has no effect on the susceptibility of low density lipoprotein (LDL) to oxidative modification in men. There is no difference in the conjugated dienes, lipid peroxides, and macrophage uptake or electrophoretic mobility of the LDL. Men fed on a partially hydrogenated fish oil diet have more vitamin E in their serum than those fed on a partially hydrogenated soybean oil diet or butterfat diet. The three diet groups do not show differences in LDL particle composition.

An assessment of the use of simple methods to predict individual energy intakes for intervention studies
Article Abstract:
A rapid and inexpensive method can be used to predict weight maintenance energy intake (WMEI) sufficiently accurately to prevent significant weight fluctuations in men, according to research undertaken among 31 male students. The best prediction of WMEI was given by the FAO/WHO/UNU equation based on age, sex and weight used alongside categorization of the research subjects into different groups according to physical activity. It was established, as has already been found in earlier research work, that data on individual energy intake is not precise.
