Two grainlike staple foods of the Aztecs and the Incas are said to supply complex carbohydrates, extra fiber, protein and other nutrients to a low-fat diet. They are the amaranth, considered the miracle food of the Aztecs, and the quinoa, the Inca's ancient sacred food.
