Bouillabaisse is a contraction of 'bouillir' that is to boil and 'abaisser' that is to reduce and it includes red snapper, sea bass and striped bass. The various other flavors of bouillabaisse include fish, fish heads and bones, herbs, potatoes, and oranges.
