Cookin' lean: beta-carotene crudites

Raw vegetable appetizers for dipping can be made with vegetables rich in beta carotene. Carrots and butternut squash are good for this dish. Steam blanching is a quick cook method that tenderizes vegetables while bringing out color, digestibility and flavor. Tips are given on the technique.
