Tofu prepared with calcium sulfate has twice as much calcium as equal amounts of cottage or mozzarella part-skim cheese. It is rich in iron, protein, and the cancer-fighting isoflavones. Tofu is sold in four basic textures. Tips are given on handling, storing, and preparing tofu dishes.
