Easing the burden

The payroll tax burden for the average restaurant in Canada has more than doubled in the last ten years. The restaurant industry in currently facing another net increase in payroll taxes with a 40% increase in Canadian Pension Plan and Quebec Pension Plan premiums. The planned increases will virtually wipe out the benefits gained by the restaurants from a 15-cent reduction in Employment Insurance premiums as payroll tax relief in the fall of 1999.

Yves Veggie Cuisine (YVC) is taking on competition in Vancouver, Canada, with its alternative vegetarian offering. YVC's 1,800-sq-ft branch on Fourth Avenue is a self-serve establishment offering over three dozen vegetarian items, most of which are targeted to the take-home market. With current annual sales of around C$46 mil, Vancouver-headquartered YVC has created a niche in the vegetarian market with a growth rate of 40% annually.
