Seasons in Thyme has had a financially successful year in 2000 with sales of $1 million, up from $750,000 in 1999. Its owner, Stefan Czapalay, is proud of the years of hard work and personal attention to detail that helped lay the foundation for the 100-seat restaurant's international reputation. He also launched the 'Essence of Thyme' retail line in 1999 featuring signature vinaigrettes such as Maple-Balsamic and Cranberry- Pumpkin Seed which are carried by grocery chains such as Loblaws. Seasons in Thyme has entered into a deal with a manufacturing partner to move production to a high-capacity plant.

Talented chefs are being recruited by restaurateurs who are offering them higher salaries, relocation packages and better benefits. Canadian chefs are in great demand particularly because of their knowledge of European cooking, familiarity with American cookery and flexible management styles that fit well in Asian cities.
