The aim of Slow Food is promotion of taste education and to safeguard the culinary traditions and the environment. A five-day food and wine gastronomic extravaganza, which is held every two years in Turin, Italy is reported.

Pavarotti's chef pairs pinot gris

The pairing of salmon and avocado tartare with The Lost Valley Cortese (an Italian white grape) by Chef Danny Russo is described. The oil Pinot gris went down well with tortellini creating a balanced flavor and texture.
