Comparative survival rates of human-derived probiotic Lactobacillus paracasei and L. salivarius strains during heat treatment and spray drying

Research has been conducted on the preservation of human-derived strains with probiotic potential Lactobacillus paracasei and Lactobacillus salivarius. Results indicate that spray drying can produce large quantities of probiotic cultures.

Direct in situ viability assessment of bacteria in probiotic dairy products using viability staining in conjunction with confocal scanning laser microscopy
Article Abstract:
An assessment is presented on a technique combining the LIVE/DEAD BacLight viability stain with confocal scanning laser microscopy, using the probiotic strains Bifidobacterium sp. strain UCC35612 and Lactobacillus paracasei NFBC 338. Findings indicate that the BacLight stain technique needs to be optimized, as it yielded bacterial counts higher than those obtained by conventional nutrient-algar-based plate counting.

Enhanced survival of GroESL-overproducing Lactobacillus paracasei NFBC 338 under stressful conditions induced by drying
Article Abstract:
A study demonstrated that GroESL overproduction in Lactobacillus paracasei NFBC 338 resulted in improved performance during spray- and freeze drying but gave no contribution in enhancing the survival of probiotic cultures during storage in the powder form. Spray- and freeze-dried cultures overproducing GroESL exhibited better survival demonstrating the importance of GroESL in stress tolerance.
