Effects of temperature abuse on survival of Vibrio vulnificus in oysters
Article Abstract:
The effects of temperature abuse on the levels of an artificially-inoculated strain of Vibrio vulnificus were examined. The presence of Tnpho as a genetic marker allowed for a more accurate determination of microbial counts. The results showed that at all temperatures tested, ranging from 0.5 to 22 degrees celsius (C), the numbers of V. vulnificus declined over a 10-day period. Experiments on shucked oysters showed that temperatures in the range of 17 to 22 degrees C could promote large increases in bacterial counts. These results show that temperature abuse does not lead to elevations in V. vulnificus counts, although the indigenous levels may be beyond risk limits.

The sudden emergence of a virulent clade of Vibrio vulnificus and its correlation with the presence of a 33-kilobase genomic island is examined. The region associated with the genomic island is found to give isolates that are more suitable for the human host or the aquatic environment.
