Sensitivity, specificity, and predictive values of three Salmonella rapid detection kits using fresh and frozen poultry environmental samples versus those of standard plating
Article Abstract:
The performance of three rapid testing kits in detecting the presence of Salmonella in fresh and frozen poultry has been compared with that of standard plating. These tests are Reveal, an ELISA assay from Neogen Corp, BIND, a bacterial ice nucleation method from Idetek Corp and filter monitor method from Future Medical Technologies. Brilliant green with novabiocin and xylose-lysine-tergitol-4-agar were used in presumptive identification in the standard culture. Poly-O-antisera were utilized in confirming the identities. Results indicated that all three tests were able to detect Salmonella at a concentration of 10 CFU/ml in at least one of four trials.

Growth of Listeria monocytogenes and Yersinia enterocolitica on cooked modified-atmosphere-packaged poultry in the presence and absence of a naturally occurring microbiota
Article Abstract:
The effect of a naturally occurring microbiota on the growth of Listeria monocytogenes and Yersinia enterocolitica on cooked poultry processed through modified-atmospheri packaging has been studied. Cooked poultry cuts were administered with five-strain composite mixtures of L. monocytogenes or Y. enterocolitica and stored at refrigeration temperature of 3.5 degrees C and at abuse temperatures of 6.5 and 10 degrees C. Results show the microbiota is not a factor in the growth of either pathogen. Lactate and shelf life extender ALTA 2341 enlarged the lag phases of both pathogens but did not hinder their growth.
