Tannin-protein complex-degrading enterobacteria isolated from the alimentary tracts of koalas and a selective medium for their enumeration
Article Abstract:
Bacteria capable of degrading tannin-protein complexes (T-CP) were isolated from the feces and cecal wall of koalas. The predominant strains were shown to belong to the Enterobacteriaceae based on morphological features and biochemical reactions. A selective medium, based on Wilkins-Chalgren anaerobe agar supplemented with arginine, tannin and vancomycin, was developed for these isolated strains. The medium supported the growth of the enterobacteria while excluding Streptococcus bovis, another common digestive tract T-CP degrader.

Effects of lactobacilli on yeast-catalyzed ethanol fermentations
Article Abstract:
The effect of five Lactobacillus isolates on wheat mash fermentation is investigated. Results reveal that contaminant bacteria account for less than 1% diversion in fermentable sugar. The depression of yeast growth and metabolism is attributed to the production of lactic acid by the contaminant bacteria. The competition for nutrients between bacteria and yeasts is also responsible for decreased metabolism and ethanol yield.

Isolation of tannin-degrading lactobacilli from humans and fermented foods
Article Abstract:
Research has been conducted on the isolated from fermented foods lactobacilli with tannase activity. The results of the PCR-based taxonomic assay have demonstrated that these lactobacilli belong to three species.
