The ftsH gene of the wine bacterium Oenococcus oeni is involved in protection against environmental stress
Article Abstract:
Research has been conducted on wine bacterium Oenococcus oeni which has to cope with such environmental conditions as nonoptimal growth temperatures, acidic pH and high alcoholic content. The authors describe the cloning and characterization of O. oeni ftsH gene encoding ATP binding cassette protein superfamily protease, and suggest that this gene is a well-conserved stress-protective molecular device.
