The rapidity with which the Australia based Kallis family has been adapting to the trends in consumer preferences is discussed and that in all probability is reason for their success. The growth of Red Rooster, a small chicken-and-chips chain started by Peter Kallis in 1972 to the present day Kallis Organic Olive Groves is traced.
