Europe's consumer catering is ranked one of the biggest consumer markets in the world that saw inconsistent fortunes in the 1993 to 1997 review period. Global recession and a decrease in disposable incomes affected consumer confidence and non-essential expenditure, as well as fueled desires of value-for-money in buying food. However, the later part of the five-year review period were characterizes by economic recovery in a number of key markets. The recovery led to a polarization in several sectors of the consumer catering industry and consumers demanding greater quality of food product.

The market was found to be shedding conventional restaurants and replacing them with quick-service outlets. French lifestyle dictates that restaurants offer quick service, excellent meals and affordable prices.
