Some of the fish like sandeel, argentine and blenny are low in nutritional value. Scientists, along with biologists and chefs are trying to develop recipes that would give higher nutritional value to these fish.

The fish processing method used by Iceland based food-processing company Skaginn is described. The skin of groundfish fillets is frozen before removing it to minimize waste and make skinning easier.
