The UK's eating out market is expected to amount to 20.6 billion pounds sterling by end-1999, with expenditure up 24% between 1994 and 1999 in real terms. Tourism has a considerable impact on the market, with total spending by tourists in the UK reaching 27.3 billion pounds sterling in 1997, up 50% from 1990. The fast food sector accounts for some 25% of the market, with pub catering and restaurants accounting for 22% each and hotel catering with an 18% share. The eating out market is forecast to reach 22.10 billion pounds sterling by 2003.

Adverse selection, waiting lists and restaurant-rationing
Article Abstract:
Suppliers of restaurant products, when faced with a heterogeneous consumer base coupled with adverse selection problems, may optimize operation through rationing the number of its customers. Rationing producers waiting time sifts out less profitable formal restaurant consumers while it also clears the market in equilibrium. The model assumes that the restaurant in question caters to social diners who usually do not mind waiting in queues for their seats.
