Swiss cheese named 'Tete de Moine' (monk's head) is the first Swiss cheese to receive an AOC (Appellation d'Origine Controlee). This hard cheese is made from raw goat's milk and is sold in trays of 125 grams in self-service departments, or in wheels and half-wheels at delicatessen counters.
