FRANCE: SERRANO HAM PROMOTION
Article Abstract:
In France, all retail chains are offering Serrano ham which is produced throughout Spain, at hypermarkets delicatessen counters. Consorcio, an association of 15 Spanish producers, which accounts for 70% of the exports, is going to organise a promotional campaign for retailers and consumers in order to make their products items of reference among quality hams. Meetings with buyers and in store tastings will be organised from September to December 2001. Consorcio is studying the possibility of having its product sliced in France in order to sell its ham in self-service departments. The Spanish do not have adequate technology to make nice slices of this ham, which is drier than Italian ham.

FRANCE: RILLETTES DU MANS FOCUS ON QUALITY
Article Abstract:
Rillettes from Mans and from the Sarthe are currently going through a process designed to obtain a certificate of compliance. This process, launched by the 'Les Porcs de la Sarthe' group and by the Bahier company, and also backed by the Syndicate pour la Certification et la Quality des Porcs de la Sarthe, also concerns sows, which are the primary ingredient for making rillettes. This quality process concerns food safety for consumers through animal feed; the quality of the product by sanitary controls on the farms; a strong identity link in the industry, thanks to individualised traceability of animals. The initiators of this project hope to obtain certification of compliance in 2001.
