Pub catering
Article Abstract:
Sales of pub food, in the UK, is predicted to rise in value by 20% during 1998-2002, from 4,414 million pounds sterling in 1998, to 4,673 million pounds sterling in 2002, at 1998 prices. Sales of catering have grown in importance for pub sales by 23% during 1993-1997 compared to alcoholic beverages which have only increased turnover by 3%. Some 5% of pubs sell only cold snack foods whilst 10% do not have any food service. Some 80% of pubs offering food are independent, managed or tenanted pubs, with only 2% pub restaurants. Waitress service has risen by 20% between 1996-98.

Premium eating out
Article Abstract:
The UK premium eating out market is forecast to increase by 14% from 7,292 million pounds sterling in 1999 to 9,728 million pounds sterling by 2003. The main share of the eating out market is held by hotels, which accounted for 49% in 1998. The market is driven by special events and celebratory meals, with the average spend per head being 19 pounds sterling in 1998. The hotel premium eating out market is predicted to increase from 3,640 million pounds sterling in 1999 to 5,036 million pounds sterling by 2003.

The UK's eating-out market was valued at an estimated 21.8 billion pounds sterling in 2000, up just 6% in real terms from 1995. The market is forecast to reach 23.4 billion pounds sterling by 2004. A further analysis of the UK eating-out market is presented.
