Article Abstract:
Nguyen Phuoc Dai has turned her law library into a restaurant in Ho Chi Minh City, Vietnam. She was educated in France and was a lawyer in Saigon when the North Vietnamese entered the city. She saw the Viet Cong as heroes and did not leave the city, though many of her friends did. She set up the restaurant called La Bibliotheque since she knew she would not be able to follow the profession of lawyer. She serves Vietnamese specialities in surroundings of fine antiques.

Article Abstract:
Capone's restaurant in Taipei, Taiwan, was set up by Harry Chen who had originally planned a franchise outlets but was deterred by high franchise fees. The restaurant offers home-made food at mid-range prices and live jaz each evening. Capone's was opened in Dec 1994. It is geared to middle-income adults aged over 30-years-old and attracts businessmen as well as people working in the media. Chen aims to open a branch in Vancouver and could franchise in Beijing.

Totoya restaurant in Akasaka, Tokyo, Japan, is owned and run by Masaaki Yamamoto, who studied cooking through a five-year apprenticeship at Tankuma in Kyoto, Japan. Yamamoto selects his own ingredients from the fish market each morning rather than using a middleman. The restaurant offers a wide range of sake. Yamamoto has had to learn foreign expressions as an increasing number of foreign financial institutions have come to use his restaurant.
