Chicken bars represent an emerging product sector in the fast-food arena of the French consumer catering market. These outlets highlight the freshness, quality and taste of their products, as they offer whole chickens that are roasted within the establishment, as opposed to fried chicken chains and burger chains with chicken menus. This new subsector is primarily comprised of two players, the Dorius chain, which opened in 1995, and now has 14 outlets as of end-1997; and the Poul'd'Or chain, which began business with its first outlet in March 1996. Sales of this subsector is anticipated to grow to FF50 million in end-1999, from FF5 million in 1995.

Holding de Restauration Concedee (HRC) leads the motorway sector of the French consumer catering market, with a value share of 53% in 1997, compared to 51% in 1993. HRC, which encompasses fascias l'Arche and L'Arche Cafe, is followed by Sogerba, with a 34% value share in 1997. The other notable motorway restaurant, Autogrill, registered a 4% value share in 1997, while the remaining players posted an aggregate value share of 9% in the year.
