Traditional kiosks accounted for 42.5% of the total number of outlets in the fast food sector of the French consumer catering market, in 1997. This subsector, which primarily offer sandwiches, bakery products, and specialty items from various exotic outlets and emerging chicken bars, expanded from only 778 outlets in 1993, to 1,026 outlets in 1997. The burgers subsector, including chain fast-food outlets such as McDonald's Quick and KFC, accounts for 40.6% of the total number of outlets in the sector, with 981 outlets in 1997, from only 489 outlets in 1993. Another subsector, pizza outlets, account for 13.6% of volume in the sector, with 328 outlets in 1997 from only 164 outlets in 1993; followed by dessert chains, representing 3.4% of total outlets in the sector, with 81 in 1997.

Restaurants accounted for the biggest portion of the overall consumer catering market in France in terms of value in 1997, with sales of FF100,129 million, for a 54.7% share. The figure is compared to FF98,435 million in 1993, for a positive growth result. This predicament shared only by fast food outlets, which grew from only $9,545 million in 1993, to FF15,502 million in 1997, for a 9.8% share. The second-biggest sector encompasses cafes and bars, which accounted for 15% of the market with FF23,593 million in 1997, down from FF28,295 million in 1993. The third-largest sector, hotel catering, accounted for 11.8% of the market with FF18,583 million in 1997, slightly down from FF28,295 million in 1993.
