Fast food chains accounted for the biggest growth in the overall consumer catering market in France between 1993 and 1997, with a 62.9% growth rate in terms of the number of outlets, and a 62.4% growth rate in terms of turnover value growth. The considerable growth, which includes a 10.9% volume growth rate and a 14.5% value growth rate in 1997 alone, is attributed to the fact that fast food has become well adapted to modern French lifestyles, particularly in the capital region. The only other sector with positive growth rate was restaurants, with a turnover growth of 1.7% from 1993 to 1997. The other two categories, hotel catering and cafes & bars, registered volume declines of 14.9% and 17.5%, respectively, and turnover value declines of 0.6% and 16.6%, respectively, from 1993 to 1997.

Restaurants accounted for the biggest portion of the overall consumer catering market in France, in terms of the number of outlets in 1997, with 80,946 outlets, for a 54.7% share. The figure is compared to only 74,709 outlets in 1993, for a positive growth result. This predicament shared only by fast food outlets, which grew from only 1,483 outlets in 1993, to 2,416 outlets in 1997, for a 1.6% share. The second-biggest sector encompasses cafes and bars, which accounted for 30.8% of the market with 45,517 outlets in 1997, down from 55,150 in 1993. The third-largest sector, hotel catering, accounted for 12.9% of the market with 19,609 outlets in 1997, down from 22,404 outlets in 1993.

The number of consumer catering outlets in the French market decreased by 3.8%, from 153,746 in 1993, to 147,948 in 1997. However, value sales generated by these outlets increased by an agreegate 1.8% in current terms, from FF154,966 million in 1993, to FF157,807 million in 1997. Nevertheless, vale sales in terms of real value went down by 5.3%, from FF154,966 million in 1993, to FF146,797 million in 1997.
