Bitter greens with curly leaves can be combined with sweet and smooth baby greens for unique-tasting summer salads. The appeal of these summer salads is in the intermingling of flavors and textures. Among bitter greens are radicchio, chicory and frisee, while sweet greens include romaine, mache and bibb.

Recipes of Aegean shrimp salad, crabmeat garden rolls, endive with tapenade spread, and goat-cheese buttons are presented. The recipes require 15-20 minutes of work and overall time of up to 20 minutes with the exception of the last recipe, which takes 4 hours and 15 minutes.
