Article Abstract:
A survey of built in hobs found that gas was the fastest and most controllable heat source, and sealed electric hotplates were the slowest and the most difficult to control. Those surveyed were ceramic radiant, semi-halogen, pure halogen, sealed hotplate, induction, gas and rotating gas. All were satisfactory for evenness of browing, although rotating gas, thermostatic hotplates and semi-halogen were the most even. Hobs with halogen elements can cost more than ceramic radiants, although there is no real performance difference. Induction plates are only available on expensive hobs and require only ferrous pans to be used.
