The cream market has been affected by changes in eating habits, with fewer families eating formal, home-made meals. Extra thick single cream has sold well but sales of whipping cream have declined in favour of extra thick double cream. Sour cream sales have declined but creme fraiche has gained in popularity. The cream market is forecast to grow by 18% by the year 2002, representing an increase of 2-3% annually. Most growth will be found in luxury products rather than UHT or sterilized items. Double cream will be the best selling product and creme fraiche will gain ground also. People may opt for healthy lifestyles but they will continue to indulge in cream.

The complete ice cream dessert market fell by 2.4% from 42 million pounds sterling in 1995 to 41 million pounds sterling in 1997.
