Chilled ready meals appeal to young employed men, working women and affluent families. In 1995 the best selling meals were cottage pie, lasagne, cauliflower cheese and fisherman's pie. Interest has grown in ethnic and vegetarian meals, with Indian and Chinese meals holding 43% of value sales last year. Marks and Spencer is the market leader in chilled ready meals. For the market to maintain its growth it needs to consider the demands of the main consumer groups listed above; which include quality, value, variety and portion size. Rice sales in the UK have benefitted from growing consumer interest in ethnic foods. However, price competition is a major feature and value sales grew by only 4% in the five years to 1998 to reach 165 million pound sterling. Speciality rices have added some value, and growth in this sub-sector will be important to the future development of the rice market. Long grain rice accounts for around 80% of dry rice sales. Own label products dominate the market, but Batchelors has captured almost half of the savoury rice sub-sector. India is the chief source of UK rice imports.

Consumption of rice has increased due to awareness of ethnic cookery, convenience foods and healthy eating. Long grain white rice dominates the market, and accounts for 75% of rice sold in the UK. Basmati rice is increasing in popularity, and sales have increased by 60% between 1992 and 1996 to 24 million pounds. The ready meals market, especially Indian food, was worth 220 million pounds sterling in 1996 and continues to grow. Rice consumption in the UK is low and manufacturers will need to focus on convenience and health to encourage higher sales.
