The United Kingdom retail market for yellow fats (butter, margarines and spreads) is expected to grow 11% to 1 billion pounds sterling in the year 2001 from 906 million pounds sterling in 1997 at current prices, or fall to 889 million pounds sterling by 2001 at 1997 prices. The market fell just less than 1% by volume to 459,000 tonnes in 1996 from 1995, with the rate of decline slower than in previous years. Consumption is being impacted by changing lifestyles, although consumers are apparently moving towards products marketed on taste rather than health.

The UK total butter and margarine market is forecast to increase from 874 million pounds sterling in 1999 to 929 million pounds sterling by 2003. The margarine market will decline from 520 million pounds sterling in 1999 to 509 million pounds sterling by 2003. Awareness of health issues has led to people reducing their own in-take of fats while remaining keen to enjoy the taste of butter. Up to 49% of consumers claim taste is the most important factor when choosing yellow fat products.
