Great young chefs, such as Corinna Mozo of Truc and Daniel Patterson of Babette's in Sonoma, CA, are creating fresh dishes that go well with wine. Local ingredients, regional fusions and pairing of complementary dishes are important to these cooks. Their styles and restaurants are profiled.
