Antioxidants and human disease: a general introduction
Article Abstract:
Antioxidants may prove useful in preventing aging and disease, but more research must be done. Dangerous free radicals can be triggered by excessive intake of iron and copper and should be prevented. The optimal intake of dietary antioxidants to prevent oxidative stress or other complications, however, requires further study. The reactive oxygen species, antioxidant defenses, DNA damage, low density lipoproteins, and nitric oxide are also discussed.

CFSAN is the component of the Food and Drug Administration that monitors food and cosmetic safety.
