Creme fraiche potato salad

Until recently French-style creams were unavailable in the US, but now a few dairies make creme fraiche similar to the indigenous French cream. A recipe for potato salad made with the cream is given and cooking with cream in general is discussed.

The goose's legacy
Article Abstract:
Roasting a goose produces a large quantity of fat that can be saved for several months and used in cooking in the same manner as olive oil. A recipe for potatoes roasted in goose fat is presented.
