Four Olympic gold medalists spoke before a symposium focusing on the relationship of nutrition with athletic performance. The four are marathon runner Billy Mills, heavyweight wrestler Bruce Baumgartner, swimmer Nicole Haislett and discus thrower Alfred Oerter. They discussed the importance of a balanced diet and the exercise of moderation in everything. They acknowledged the changing notions of nutrition because of continuing research and the need to tailor a nutritional program to a particular athlete's unique needs.

Nutritional and toxicological research has as one of its aims the search for the optimal animal diet that would generate specimens of value to laboratory testing activity. Overfeeding resulting in abnormally large weight gains and increased susceptibility to disease is a practice to be avoided in the maintenance of laboratory animals. Suggested diets come in the form of either closed or open formula commercial diets.

The 1996 American Institute of Nutrition, History of Nutrition Symposium was attended not only by members of the academe but also by athletes and industry scientists as its focus was on the nutritional aspects of athletic training. The affair both reviewed data on Olympic performance and correlated these with nutritional, cultural, medical and physiological requirements.
