Recipes for low-fat and fat-free hors d'oeuvres are presented. Treats, such as Caponata in lavash cups, spicy tequila-spiked cherry tomatoes, and smoked salmon and curried-potato nori rolls, can be offered by themselves or with richer, fattier appetizers.
