Nutrition education in the kindergarten curriculum: a content analysis
Article Abstract:
The nutrition lesson plans of kindergarten curriculum were evaluated through a content analysis procedure. Fifteen kindergarten teachers who were beneficiaries of the Nutrition Education and Training Program were recruited. These teachers, in turn, were able to recruit another 181 kindergarten teachers from the school system. The other lesson plans were language arts, math, social studies, science and health, physical development, and art and music. It was concluded that nutrition lesson plans can help realize the broader goals of a curriculum in addition to nutrition education.

Children are "growing healthy" in South Carolina
Article Abstract:
The KinderGarden project was established at Walhalla Elementary School in Walhalla, SC, through the cooperation of the kindergarten teachers and nutrition faculty from Clemson University. It is basically a comprehensive nutrition education curriculum for kindergarten students that involves a school-based garden and integration of nutrition education into the current language arts and science curriculum. Student assessments included colorful picture pre- and post-tests that measured fruit and vegetable identification, willingness to taste and identification of the best snack.

Development of a nutrition education curriculum for Head Start children
Article Abstract:
The effectiveness of the nutrition education curriculum developed by the Head Start program which was established primarily to provide developmental services for children of low-income families is examined among 1,000 school children in the US. Results show that the curriculum was effective in promoting desired behavioral and attitudinal changes in terms of nutrition knowledge of the subjects.
