Nutrition education issues for minority parents: a needs assessment
Article Abstract:
The nutritional concerns of low income Black and Hispanic mothers, their interest and preferences in nutrition education were assessed using the nutrition needs assessment questionnaire. Results show that both groups of mothers showed high levels of interest in nutrition such as food preparation and purchasing issues. Anemia, underweight and dental caries were identified as the most important health problems affecting their children. In addition, both groups affirmed their need for more nutrition information and revealed that physicians and nutritionists are the common sources of such information. The implications of these results to nutrition education are presented.

Children's nutrition workbook
Article Abstract:
The children's nutrition workbook developed at the Virginia Polytechnic Institute and State University proved to be effective in revealing information about the schoolchildren's knowledge of food and nutrition. It was particularly effective among children aged 9 to 11 years in determining eating patterns and nutritional contents of food they usually eat. The workbook may also serve as an instructional tool for therapeutic diets and a basis for nutrition lessons in classrooms.

Teaching anthropometric and nutritional assessment
Article Abstract:
Students of both the Didactic Programs in Dietetics and the Coordinated Programs in Dietetics experience limited opportunities to apply their knowledge of nutritional assessment and anthropometric measurements in clinical settings as a result of economic difficulties in healthcare. To address such problem, two educational programs aimed at providing preprofessional opportunities for practical experience and in improving entry-level skills of dietetic students are discussed.
