Issues concerning the history of the parsnip in culinary fare are presented, with reference to its nutritional content and different uses in cooking. Recipes are included for Parsnips with Peas, Crispy Prosciutto and Mint; Whipped Parsnips with Roasted Garlic; Gingered Parsnip Bisque; and Maple Glazed Parsnips with Popped Mustard Seeds.
